The ability to see what the email looks like when the user has darkmode set as their preference in their email client. The ability to set the colors for dark mode.
Or a way to just restrict email clients from using dark mode, so only one email version is forced on recipients.
Even making so that if colors are set in Template Defaults, those are the colors that get used.
